Over Under Control from North South, North South Choke from Side Control
2 Part Technique - Setting up the North South Choke against a defensive opponent can sometimes be a waiting game. It is important to realize that once you're on top, you are in control of the position and can risk biding your time for the opponent to open himself up during an escape. Switch your arms from Side Control to North South Control and use your knee and arm to block him from reaching his hands to his head. Land into the North South Choke and finish once you've noticed that the opponent has turned his chin away from the side you plan on attacking from. If he insists on defending the submission by coming up onto his side, use your non-choking hand to grab his leg and twist him back onto his other side, thus exposing his neck again.
