Marcelo explains how to he prefers to defend a Knee-Cut with a Hook-Lift from Shin-on-Shin: Force your opponent to overshoot if they try cutting across your lap with their knee by elevating them overhead with your Butterfly-Hook against their shin. If their knee gets through, don't let their knee or hip touchdown on the ground; use your elbow to help brace against their leg and occupy the space they need for the pass. If you can place your hand against the cutting knee, you can push it and help guide it back onto your hook if you happen to lose it during the cut. If your hook and arm fail to prevent the cut, try forcing your opponent to take the mount while intercepting their outside/trailing leg with your other Butterfly-Hook. How you handle the situation largely depends on which grips your opponent has set when they attempt the cut. Prevent them from getting a grip on your sleeves or your collar if you can well beforehand. There is also the possibility of coming up onto a Single-Leg, especially if they arrive on your side and make you start turning the corner to follow their attack.
